The 320 members of the Koerintji Barokah Bersama Cooperative live and farm on a plateau that sits at the foot of Mount Kerinci on the island of Sumatra. Mount Kerinci is one of the many volcanoes in the Pacific Ring of Fire, a 40,000-kilometer horseshoe-shaped series of 452 volcanoes that are part of an almost constant dance of eruptions and plate movements. Mount Kerinci’s historic eruptions have assured that the surrounding area is lush and verdant thanks to the deep supply of fertile volcanic soil.
The cooperative is managed by Triyono, who leads members in processing and roasting their own coffee. They have a fully outfitted roasting facility, including a cupping lab, next to the dry mill. This is especially impressive considering the cooperative was founded in mid-2017!
The Process Unveiled:
1. Coffee is floated and separated by density.
2. Laid on raised beds where workers remove underripes, overripes, and damaged cherries.
3. Ripe cherries are collected and sealed in airtight 20kg plastic bags.
4. Stored in a cool, dry location (18-22°C) for 7 days.
5. After 7 days, cherries are laid on raised beds to dry.
6. Beds are located in domes to protect from rain and harsh sunlight.
7. Parchment dries for around 20 to 23 days.
8. When dry, coffee is milled and sorted by hand.

In our quest to minimize emissions and ultimately become a carbon and energy-negative company, we're committed to roasting our coffee using electric roasters powered by renewable energy. Eventually every bit of energy we use, from the electricity powering our coffee roasters to the battery in the laptop used to write this message, will come from renewable sources.
At the moment, we're proud to say that 30-45% of the energy we use to roast our coffee is sourced from renewable energy.
Sustainability
We're deeply dedicated to sustainability, which is why our bags are 100% recyclable. They're free from any ink and glue, except for the non-toxic, biodegradable ink we use for the roasting date stamp.
Plus, we craft these bags without using any electricity, except for sealing them. Our bags are also resealable, making them perfect for multiple uses.
