Sidra - Advanced Process - Finca El Diviso
Five years prior, Nestor Lasso, alongside his brother Adrian, embarked on a transformative journey with their family farm, venturing into the realm of specialty coffee driven by a zeal for innovation and unparalleled quality. The duo joined forces with Jhoan Vergara to establish the farm known as “El Diviso”. United, this trio of enthusiastic and ingenious producers is crafting extraordinary coffees that undoubtedly merit widespread acclaim.
The Process Unveiled:
- Hand-picked cherries at full maturity.
- Oxidised for 12 hours at a maximum temperature of 25°C.
- Anaerobic process in a bag or plastic tank for 50 hours at a temperature of 16-18°C.
- Second oxidation stage in an open-air tank for 20 hours at a maximum temperature of 42°C.
- Second anaerobic process in calibrated bags for 30 hours at a temperature ranging from 16-20°C.
- Submerged fermentation in 45°C water mixed with coffee must for 18 hours.
- Drying process in marquesina until reaching 11% moisture content.
- Stored in black plastic bags for 60 hours in a dark room to rest.
- Final drying process in marquesina until reaching 11% moisture content.

Sustainability
We're deeply dedicated to sustainability, which is why our bags are 100% recyclable. They're free from any ink and glue, except for the non-toxic, biodegradable ink we use for the roasting date stamp.
Plus, we craft these bags without using any electricity, except for sealing them. Our bags are also resealable, making them perfect for multiple uses.
